Icing

  • *Spoon & Sweep method: Use a spoon to fill measuring cup with flour until required amount is obtained. Scooping measuring cup directly into flour bag will firmly pack flour resulting in too much flour required for recipe.

Directions

  1. Preheat oven to 350°F. Line two baking sheets with parchment paper. Set aside.
  2. In a medium bowl, whisk together flour, cornstarch, baking soda, cinnamon, salt and nutmeg. Set aside.
  3. In a stand mixer, beat butter and both sugars until light and fluffy, about 2 minutes. Add in egg and vanilla extract, scrapping down the sides of the bowl as needed.
  4. Add flour mixture, mixing until completely combined. Stir in apple pie filling until evenly distributed. (You can do this by hand or with the stand mixer.)
  5. Using a large cookie scoop (about 1 heaping tablespoon of dough), drop rounded balls of dough onto prepared cookie sheet. Leaving space for spreading.
  6. Bake cookies for 13-15 minutes, or until golden brown at edges. The cookies will not look fully cooked in the center, but they will finish cooking while cooling on cookie sheet.
  7. For icing: In a small bowl, whisk together powdered sugar, milk and vanilla extract until smooth. Drizzle on top of cooled cookies.
  8. Sprinkle with cinnamon. Let icing set for 10 minutes, or until firm.

This is a moist spicy cookie. I left the icing off and they were still very good.

If you took apple bread and turned it into a cookie, this is what it would taste like. Cake like, soft cookies that remind me of everything Fall. I actually like them without the icing best.

  • *Método de cuchara y barrido: use una cuchara para llenar la taza de medir con harina hasta obtener la cantidad requerida. Si coloca la taza de medir directamente en la bolsa de harina, empacará la harina con firmeza y se necesitará demasiada harina para la receta.

Direcciones

  1. Precalentar el horno a 350 F. Forre dos bandejas de hornear con papel parafinado
  2. En un envase mediano, mezcle con una espumadora la harina, maicena, bicarbonato de sodio, canela, sal y nuez moscada. Ponga a un lado.
  3. En una batidora de pie, bata la mantequilla y las dos azucares  hasta que esté suave y esponjoso, por alrededor de 2 minutos. Agregar el huevo y extracto de vainilla, raspando los lados del envase si es necesario.
  4. Agregue la mezcla de la harina, mezclando hasta que todo este combinado. Agregue el relleno de pastel de manzana y mezcle hasta que esté bien distribuido. (usted puede hacer esto manualmente o con la batidora de pie).
  5. Usando una cuchara de galletas grande (alrededor de 1 cucharada amontonada de masa), deje caer bolas de maza en las bandejas de galletas preparadas. Dejando espacio para que se expandan.
  6. Hornee las galletas de 13 a 15 minutos, o hasta que las orillas estén doradas. La galleta no lucirá completamente cocida en el centro, pero se terminaran de cocer mientras se enfrían en la bandeja de hornear.
